Ingredients

  • 300 ml lukewarm water
  • 350 g wheat flour type 405
  • 50g yeast flakes
  • 5g dry yeast
  • 1 tsp sea salt

Small wheat breads with hearty cheese flavour

This very simple recipe for two small wheat breads with savoury cheese flavour is quick to make and very easy to use. The dough is prepared with just five ingredients and a few simple steps, then the bread only needs to rise briefly and is then baked in less than half an hour.

 

The savoury cheese flavour that comes from the yeast flakes makes the bread ideal as a crunchy side dish to a main course or as a hearty base for a dinner with raw vegetables or a savoury spread. This way, the yeast flake bread rounds off the meal with a special flavour.

 

Note: These quantities are for two small side breads. Of course, the dough can also be made into a single long loaf. If you would like to bake a large loaf, you can simply double the ingredients.

Instructions

  1. Mix the flour with the yeast flakes in advance so that they are well distributed throughout the dough.

  2. Then put the flour-yeast flake mixture in a bowl with the water, dry yeast and salt. Knead all the ingredients together for 5 minutes until a homogeneous dough is formed.

  3. Line two small baking tins with baking paper and divide the dough. Pour the two pieces of dough into one tin each to rise and leave to rest at room temperature for 30 minutes.

Bake it

  1. Preheat the oven to 200° top/bottom heat.

  2. Bake the two loaves in the oven for 25 minutes and then turn off the temperature. Leave the breads to rest in the switched-off oven for a further 15 minutes.

  3. Serve the breads as a side dish with food or with raw vegetables and a hearty spread.
