Ingredients

  • 500 g spelt flour type 630
  • 300 ml room temperature water
  • 35 g sesame seeds (plus sesame seeds for decorating)
  • 20 g olive oil
  • 14 g dry yeast
  • 5 g salt
  • 5 g sugar

Quick spelt and sesame sticks with a short rise time

Nothing tastes better at the weekend than home-baked bread rolls fresh from the oven. Unfortunately, most bread roll recipes require a longer preparation or baking time. If you’re in a hurry, you can help yourself with this recipe for quick spelt and sesame breadsticks. These spelt sticks are kneaded and shaped in just a few simple steps and are then ready in the oven after a super-short baking time of just half an hour. Fresh bread rolls are on the table in less than an hour and smell great with your coffee.

 

For this recipe, we have added sesame seeds to the dough to give the rolls a slightly nutty flavour. This is because the short rising time makes it difficult for the flavours in the dough to develop. If you don’t like sesame seeds, you can of course also use other grains as flavour carriers. For example, linseed, almonds, pumpkin seeds or poppy seeds can be used. If you bake the recipe regularly, you can vary the flavour of the recipe simply by choosing different seeds to add a little variety to your breakfast table.

Instructions

  1. Mix all the ingredients together in a large bowl and knead well for approx. 10 minutes. The olive oil creates a very smooth dough.

  2. Immediately after kneading, divide the dough into 8 pieces and then shape these pieces into long patties by rolling them.

  3. Sprinkle a plate with more sesame seeds and set aside. Brush the dough pieces with a little water (or alternatively milk) so that the seeds stick better. Then roll each patty briefly in the sesame seeds so that the patties are well covered with sesame seeds.

  4. Place the prepared patties on a baking tray lined with baking paper and leave to rest for 15 minutes. The oven can be preheated at the same time.

  5. After 15 minutes or shortly before baking, cut into the dough pieces to allow the moisture to escape during baking. You can make several diagonal cuts or one longer cut.

Bake it

  1. Preheat the oven to 225° and prepare a bowl of hot water.

  2. Place the bowl of hot water in the oven and place the tray with the dough pieces directly in the oven.

  3. After 10 minutes, remove the bowl of hot water and briefly open the oven door wide to allow the residual moisture to escape. Bake the spelt rolls for a further 10-15 minutes until golden brown.

  4. Once baked, remove the rolls from the oven and leave to cool thoroughly before eating.
